We wanted to try white wine for a long time, but as we could not plant any in Saint-Nicolas, we went to our neighbours in Saumur and found this superb plot on the Puy Notre Dame hill. This wine is enhanced by its luxurious maturation, giving it roundness and brioche aromas.

 

the vineyard

Our chenin vines are planted on a land rich in limestone clay of the upper turonian, giving the wine a great subtlety. All of our grapes are harvested by hand and no insecticide is used on our forty-six-year-old vines.

 

vinification

Direct pressing and fermentation with indigenous yeasts in barrels. Half of the production is aged in barrels, the other half in tuns and then blended together.

 

tasting

With its pale yellow colour, the fruity aromas of this wine will seduce you. A gustatory journey is guaranteed with its smoky and quince notes. In the mouth, it's aperfect harmony between minerality and richness.

 

pairing

A scallop risotto or grilled bread with goat's cheese & honey will go perfectly with this wine. Serve between 10°C and 12°C.
