Submersion; a fluid and delicate cuvée, short maceration of cabernet franc. The aging on total lees gives it a smoky nose. The palate is supple, fresh, light and bursting with fruit. First vintage of a new series, it illustrates climate change through exceptional natural events.

This style of vinification reflects our adaptation to the climate. Through the issue of freshness in wines, we build wines that are part of a Loire identity.

This wine is neither filtered nor fined, it is the direct reflection of the Cabernet Franc from Saint Nicolas de Bourgueil.

 

the vineyard

Our Cabernet Franc vines are planted on a terrace where the Loire has deposited its sand and gravel. All of our grapes are harvested by hand and no insecticide is used on our 40-year-old vines.
 

tasting

This 2019 vintage reveals notes of liquorice and wild strawberries. Your mouth will be carried away by this pretty basket of wild blackberries and violets.

 

vinification 

 

Fruit of an infusion of destemmed grapes, this cuvée is aged for 2 years in vats. The yeasts are indigenous and the wine has few sulphites, 30mg/L in total.

 

pairing

Ready to drink, this cuvée can be consumed within 5 years. This wine will sublimate razor clams a la plancha with parsley, or even pretty lamb chops. Open 1 hour before and serve between 14°C and 16°C.
